Eda Nur Ayar Sümer

Biography:

Eda Nur Ayar-Sümer earned her Ph.D. in Food Engineering from Istanbul Technical University in 2024. During her doctoral studies, she conducted part of her research at Ghent University's Faculty of Bioscience Engineering, supported by Turkish and EU scholarships. Currently, she is pursuing postdoctoral research at the same institution. Her expertise spans food chemistry, biochemistry, bioactive compounds, biotechnology, waste valorisation, encapsulation, and the in vitro digestion behavior of bioactive components. She is also actively involved in developing interdisciplinary European projects focused on integrating AI into food and agricultural production, aiming to address global challenges through innovative and sustainable solutions.
